The Menu

This year's theme, "Tapas Under The Tents" will feature a selection of delicious hors d'oeuvres with a decidedly Southern slant with many favorites from Bashes of the past returning along with new additions:

 

 

The Tapas:

 

Grey Goose Olive Puffs with Farmhouse Cheddar

(Representative Pete Schwarzkopf's longtime favorite)

Premium Spanish olives marinated in Grey Goose vodka and

then encased in a thin layer of Farmhouse cheddar

and smoked paprika, then baked to golden-brown perfection.

 

 

Spinach, Parmesan & Vidalia Bites

Tender baby spinach, aged Parmigiano-Reggiano

and caramelized Vidalia onions in bite-sized puffs.

 

 

Gorgonzola Dolce & Pignoli Tarts

Creamy young Italian gorgonzola cheese and tender pine nuts

with fresh rosemary in tender morsels.

 

 

Grey Goose & Citrus Shrimp

Steamed extra-jumbo prawns in a mildly spicy marinade

resplendent with red onions, cilantro, sun-dried tomatoes,

Grey Goose L'Orange Vodka and fresh citrus juice.

 

 

Smoked Northern Atlantic Whitefish Pate

Fresh whitefish from the North Atlantic smoked

with a blend of the Lewes Fishhouse' proprietary

hardwoods served with multigrain seeded flatbreads.

 

 

Pepitas

Crunchy, spicy and slightly sweet pepitas

seasoned with chipotle chilies and raw turbano sugar.

 

 

Spicy Walnut & Garlic Dip with Spring Veggies

A Mediterranean classic gets updated by combining toasty walnuts

with fresh Meyer lemon juice and garlic and fresh cracked pepper

for a spicy dip with tender Spring veggies.

 

 

Pecan Crusted Cranberry Cheese Bites

Zippy extra-sharp Farmhouse cheddar cheese and ultra-smooth fresh Farmer's cheese combine with toasty pecans and dried cranberries in these addictive bites.

 

 

Spicy Apple Grilled Chicken Wraps

The favorites return!  Boneless chicken breasts grilled over

rosemary-smoked coals, sliced thin and wrapped

with spicy apple-Dijon and Saga blue cheese sauces in a tender flour tortilla.

 

 

Maple Glazed Roast Pork with Maple

Mustard Sauce on Potato Rolls

Tender oven-roasted pork loin, thinly sliced and draped

with a spicy-sweet maple-mustard sauce served on

soft, fresh bite-sized potato rolls.

 

 

Tzatziki with Roasted Garlic, English Cucumber and Mint

Tender English cucumbers, creamy Greek yogurt and fresh mint

enhanced with roasted garlic combine for this classic

Greek dip served with crisp, toasted miniature pitas.

 

 

Spicy Meatballs with Apple-Chipotle BBQ Sauce

Not too spicy and not too sweet, these tender meatballs really sing

in a zippy sauce jazzed up with chipotle and ancho peppers.

 

 

Purple Basil and Lemon Dip with Thick Cut Potato Crisps

Fresh, homemade mayonnaise flavored with Meyer lemon juice and fragrant purple basil served with thick cut, peppery potato crisps.

 

 

Hummus Bi Tahina

Tender chickpeas with garlic and extra-virgin olive oil combine to create this Mediterranean-style dip served with ice-cold fresh crisp vegetables.

 

 

Pepperoni & Asiago Pinwheels

Earthy Asiago cheese and spicy pepperoni combine with thyme and oregano

in a flaky crust to make an absolutely addictive nibble.

 

 

Gruyere & Country Ham Pinwheels

Tender smoky country ham and nutty Swiss Gruyere cheese combine

with a hint of fresh rosemary in a flaky crust to create an alternate

version that is equally mouth-watering as the original.

 

 

Aunt Baby's Ganoush with Marble Rye Toasts

Delectable grill-tender baby aubergines mixed tahini, garlic, fresh mint

and extra-virgin olive oil with a subtle hint of cumin served with marble rye toasts.

 

 

Fresh Homemade Salsa with Spiced Tortilla Crisps

Fresh tomatoes, sweet green peppers, Vidalia onions, smoked Jalapenos and fresh cilantro (and a secret ingredient or two) make this garden-fresh salsa really pop.

 

 

Mascarpone & Aged Beef Spread with Toasted Pecans

Tangy mascarpone and fresh cream cheeses mixed with sweet

peppers, aged Angus beef and fresh-cracked pepper, topped with toasty

pecans and served atop crispy stone-ground wheat wafers.

 

 

Sake Soaked Soused Wings - Southern Style

Tender chicken wings, slow-cooked to tender perfection in a

Sake-splashed marinade that doubles as a sauce.

 

 

Caramelized Black Bean Butter with Scoops

Caramelized Vidalias lend the black beans an intriguing sweetness

and complexity which is highlighted by aged balsamic vinegar and cocoa.

 

 

Marinated Mozzarella with Capers and Coriander

Fresh tender chunks of mozzarella marinated in extra-virgin olive oil,

peppercorns, coriander, capers and fresh thyme.

 

 

Deviled Eggs

A Bash without deviled eggs is unheard of.  This rendition is extra

devilish with Dijon, garlic-scallions, capers, fresh

thyme and a mild jolt of cayenne.

 

 

Sausage Pinwheels

Hot and spicy sausage and sharp cheddar encased in

a flaky buttery crust.  A Southern classic.

 

 

The Sweets:

 

 

Kahlua Chocolate Trifle

Kahlua, bittersweet chocolate cake, whipped cream, chocolate

crème and toffee bits come together to make one memorable trifle.

 

 

Mocha Chocolate Trifle

Dark espresso replaces the Kahlua in this non-alcoholic kid-friendly

version of the trifle.

 

 

Golden Raspberry Trifle

Golden buttery cake, Jerez-Xeres Sherry, whipped cream and almond crème with toasted slivered almonds are the elements of this riff on the classic trifle.

 

 

The Beckaroo's Brownies

These sinful chocolaty brownies from the kitchen of

our country-music superstar Becky Hobbs shows that not only

can she tear up a stage and a piano,  but she sure as hell can make

one delicious (and did I mention chocolaty?) brownie!

 

 

Maker's Mark Whiskey Fruit & Nut Bars

The reigning champion of Tennessee whiskey enlivens these little darlin's

just packed with golden raisins, dried cherries, bittersweet chocolate

chips and pecans.

 

 

Streusel-Topped Key Lime Squares

Key limes are the secret ingredient that sets these treats apart from the rest.

 

 

Meyer Lemon Bars

If you love lemon bars, then you'll fall out over these!  The king of

all lemons, the Meyer adds a little somethin' somethin' to

these lemon bars that really put them over the top.

 

 

 

The Sips

 

 

Dogfish Head beer on tap

It wouldn't be a Bash without a few kegs of our favorite

Milton - brewed international

award-winning Shelter Pale Ale on tap.

 

 

Blueberry White Tea with Fresh Spearmint

The house wine of the South lightly sweetened with turbino

sugar and fragrant with fresh mint and blueberries.

 

 

Peachy Red Tea

A caffeine-free version of the South's house wine that's just sweet enough with the addition of a bit of peach nectar, fresh peach slices, and a touch of mint.

 

 

Soft Drinks

All of your carbonated favorites will be available in recyclable cans.

 

 

Water with Fresh Lemon Slices

In keeping with our commitment to making the Bash as

environmentally friendly as possible, we will be offering

pitchers of ice-cold water with fresh lemon slices

(instead of landfill-clogging plastic bottles)
